November is absolutely flying by! Over the weekend, Ben and I celebrated his birthday as well as our 8 year anniversary! (More on those celebrations soon!) Today, though, I’m excited to share a vegan veggie wrap recipe! It’s a quick, simple, and easy recipe that is both delicious and healthy!
I’ve been vegan for 6 months, and I now know I’m able to eat at just 2 restaurants in town. Otherwise, vegan options are pretty scarce. One restaurant has a vegetarian wrap that, without mayo and cheese, becomes vegan! I decided to try a version of my own at home, and this vegan veggie wrap is what I came up with!
Vegan Veggie Wrap Recipe
Vegan Veggie Wrap Ingredients
- A whole grain tortilla
- Roasted red bell pepper hummus
- Organic romaine lettuce
- Chopped cucumber
- Pico de gallo
Vegan Veggie Wrap Directions
- Chop or dice desired portion of cucumber.
- Spread roasted red bell pepper hummus on whole grain tortilla. (You may want to warm your tortilla first, so it doesn’t tear!)
- Top with organic romaine lettuce, chopped cucumber, and pico de gallo.
- Wrap, and enjoy!
